啤酒鸭是一道风味独特的特色佳肴
是深受广大食客喜爱的菜肴
据传起源于清代
啤酒鸭的做法有很多种
其主料为鸭子、啤酒
将鸭肉与啤酒一同炖煮成菜
使滋补的鸭肉味道更加浓厚
鸭肉不仅入口鲜香
还带有一股啤酒清香
主要材料 :
鸭肉或鸭腿肉800g(切块5cm*5cm)
油20g
啤酒300ml
蒜头3瓣(拍扁)
大葱30g(切段)
干辣椒4个
姜片10g
老抽15g
生抽30g
糖2勺匙
盐1勺匙
料酒10g
八角1个
香叶1片
2、将油、姜片、蒜头、切好的京葱、干辣椒、香叶、八角放入主锅内,以120度/3分钟/速度1爆香。
3、将鸭肉加入主锅内,以120度/5分钟/逆转小勺 拌炒,加入老抽、生抽、料酒、糖、盐、啤酒,以100度/20分钟/逆转小勺烹煮
4、取下量杯盖,再以120度/20分钟/小勺收汁。(可视鸭肉状态延长时间)

Light soy sauce 30g

1 bay leaf
Direction
1. Put the cut duck meat into the auxiliary basket into the main pot, add water that has just barely covered the duck meat, and blanch it at 50 degrees/5 minutes/speed 5 for use.
2. Put the oil, ginger slices, garlic, chopped green onions, dried chilies, bay leaves, and star anise into the mixing bowl, and saute at 120 degrees/3 minutes/speed 1.
3. Add the duck meat to the mixing bowl, stir fry at 120 degrees/5 minutes/reverse spoon, add dark soy sauce, light soy sauce, cooking wine, sugar, salt, beer, and cook at 100 degrees/20 minutes/reverse spoon
4. Remove the lid of the measuring cup and collect the juice at 120°C/20 minutes/tsp. (The time can be extended depending on the status of the duck)
