Blueberry Bagels蓝莓贝果

#蓝莓小知识# 蓝莓不仅富含常规营养成分,而且还含有极为丰富的黄酮类和多糖类化合物,还含丰富花青素。其味道甜酸适口,且具有香爽宜人的香气。具有防止脑神经老化、保护视力、强心、抗癌、软化血管、增强人机体免疫等作用。

材料

250克 高筋面粉

6克 酵母

3克 岩盐

40克 手工红冰糖

牛奶160克

黄油15克

自制蓝莓酱适量

 

 做法

1) 锅中倒入牛奶、酵母,以37度/2分钟/速度2。

2) 加入高筋面粉、10克糖、盐,以3分钟/搅拌。加入黄油以5分钟/搅拌。

3) 取出面团,滚圆后盖上保鲜膜静置10分钟,分成6等份,滚圆后盖上保鲜膜放置   10分钟,擀成椭圆,放入蓝莓酱,自  上而下卷起,捏紧收口。搓成长条,面的两端对接,呈一个圆形,捏紧收口。盖上保鲜膜,放置温暖的地方发酵25分钟。

4) 将30克糖加入1000克水煮至接近沸腾,转小火,放入贝果的面胚 一面煮30秒用 漏勺翻面。沥干水分摆上烤盘。放入200度/预热2分钟的烤箱,以180度/20分钟,烤制,翻面继续烤10分钟即可。


【Ingredients】

250 g high-gluten flour

6 g yeast

3g rock salt

40g handmade red rock sugar

160g milk

15 grams of butter

Homemade blueberry sauce

 

 【Direction】

  1. Pour milk and yeast into the pot at 37°C/2 minutes/speed 2.
  2. Add high-gluten flour, 10 grams of sugar, salt, and stir for 3 minutes. Add butter for 5 minutes/stir.
  3. Take out the dough, cover it with plastic wrap and let it stand for 10 minutes after rounding, divide into 6 equal parts, cover with plastic wrap after rounding and leave for 10 minutes, roll into an oval, put in blueberry sauce, roll up from top to bottom, pinch tightly close. Roll into a long strip, butt the two ends of the noodles into a round shape, pinch the mouth tightly. Cover with plastic wrap and leave to ferment for 25 minutes in a warm place.
  4. Add 30 grams of sugar to 1000 grams of water and boil until it is close to boiling. Turn the heat to low, add the bagel noodles and cook for 30 seconds. Turn over with a colander. Drain the water and place on the baking tray. Put it in an oven at 200 degrees / 2 minutes of preheating, bake at 180 degrees / 20 minutes, turn over and continue to bake for 10 minutes.
