鸡爪的营养价值颇高,含有丰富的钙质及胶原蛋白,还含有大量的脂肪,以及微量营养素。常食鸡爪,不但可以补钙,起到强筋健骨的作用,还能美容护肤。
【材料】
500克 鸡爪
50克 料酒
15克 姜片
600克 水
12个 小米椒
4根 线椒
1瓣 蒜
150克 米醋
50克 陈醋
200克 生抽
20克 香油
1茶匙
糖 适量
香菜
100克 胡萝卜
1个 柠檬
【做法】
1. 鸡爪清洗干净,剪掉指甲,切成两段,柠檬切片,胡萝卜切段。辅助篮里放入鸡爪,加入水没过鸡爪,以50度/5分钟/速度5清洗。 主锅中加入切好的鸡爪、姜片、料酒、水,以120度/15分钟/逆转/小勺 烹煮。
2. 煮好的鸡爪过凉水降温,控水备用。 将小米椒、线椒、蒜放入主锅,以5秒/速度5 切碎。
3. 主锅中加入陈醋、米醋、生抽、糖、香油,控干水的鸡爪,以65度/15分钟/逆转/小勺,低温烹煮入味。
4. 倒入碗中加上柠檬、香菜、胡萝卜搅拌,还可以封上保鲜膜放入冰箱,冷藏后的鸡爪食用味道更佳。

【Direction】
1. Clean the chicken feet, cut off your nails, cut into two pieces, slice lemon and cut carrot into pieces. Put chicken feet in the auxiliary basket, add water to the chicken feet, and wash at 50 degrees/5 minutes/speed 5. Add the cut chicken feet, ginger slices, cooking wine, and water to the mixing bowl, and cook at 120 degrees/15 minutes/reverse/small spoon.
2. Cool the cooked chicken feet in cold water, and control the water for later use. Put millet pepper, string pepper and garlic in mixing bowl and chop at 5 seconds/speed 5.
3. Add aged vinegar, rice vinegar, light soy sauce, sugar, sesame oil, dry chicken feet in the mixing bowl, cook at 65 degrees/15 minutes/reversal/tsp, low temperature for flavor.
4. Pour into a bowl, stir with lemon, coriander, and carrots. You can also put it in the refrigerator with plastic wrap. The chicken feet will taste better after refrigeration.
