猪蹄(切块)500g
油20g
水500g
姜片10g
冰糖20g
老抽20g
生抽20g
料酒30g
八角2支
香叶2片

制作方法:
1·将猪蹄放入辅助蓝中加入没过猪蹄的水,以50度/5分钟/速度5焯水洗净备用
2.将油,姜片放入主锅内,以120度/3分钟/速度1爆香
3.将猪蹄.冰糖.老抽.生抽.料酒.八角.香叶.水(500g).盐放入锅内,以110度/80分钟/逆时针搅拌烹煮
4.最后30分钟取下量杯盖收汁即可
