INGREDIENTS
360g Glutinous Rice, soaked
30g Coconut Oil
15g Sugar
5g Salt
150g Red Bean Paste
Toppings:
10g Jujubes
20g Raisin
10g Pumpkin Seed, roasted
10g Goji Berry
20g Walnut Chunk, roasted
Syrup:
200g Water
60g Honey Comb Sugar
2g Chrysanthemum Buds
2 Orange Zest
INSTRUCTION
Place 1 litre of water into Allda bowl, then insert Allda basket filled with glutinous rice. Steam the glutinous rice for 15 minutes at Speed 4.
While waiting for the rice, arrange every toppings flat inside the 5 rice bowls.
Remove Allda basket with glutinous rice which is half-cooked from the Allda bowl, then add in coconut oil, sugar, salt, and mix well.
While the glutinous rice is still warm, fill and press 1/2 rice bowl of glutinous rice, then press a dent in the middle to fill in 30g red bean paste each.
Fill the rice bowl with another layer of glutinous rice, and nicely press until flat and fully compressed.
Get ready 1 litre of water inside the Allda bowl, then place the steaming bowl on top with the rice bowls inside it.
Set the temperature to Steam and continue the cooking for 10 minutes at Speed 3 until the glutinous rice is fully cooked.
When it is ready to serve, place a plate on top of the rice bowl then flip it over and remove the bowl.
Syrup:
Add all the ingredients into Allda bowl and cook at 80°C for 3 minutes at Speed 1.
Strain the syrup into a glass jug/bowl to remove the chrysanthemum buds using Allda basket.
Set aside and ready to serve with the rice pudding.
