Fried Chop Rice Cake  驴打滚

『食材』

100 克 黄豆粉

400 克 糯米粉

900 克 水

50 克 糖

200 克 红豆沙

 

『做法』

1.将黄豆粉放入平底锅内,小火翻炒。待黄豆面的颜色由淡黄色变成均与的浅褐色,能闻到明显的豆香味就可以停火,将炒好的黄豆粉晾凉备用。

2.将烘焙用纸裁剪成比蒸盘底部再稍大的形状,铺在蒸盘上,边缘能稍微立起,但不遮住两侧的蒸气孔,置于一旁备用。将糯米粉、400克水和糖放入主锅,以10 秒/速度 6混合,倒入铺了烘焙用纸的蒸盘内,置入蒸锅,盖上蒸锅盖备用,清洁主锅。

3.将500克水放入主锅,架上蒸锅组,以35分/120/速度2蒸煮,取下蒸锅,将糯米粉团置于室温,晾至温热。

4.在案板上洒上炒好的黄豆粉,将温热的糯米面团放在案板上,再在上面撒一层黄豆粉,用擀面杖将糯米面擀成面0.5厘米厚的长方形面团,将红豆沙均匀的涂在糯米面皮上,小心地向内卷,用利刀将豆面卷切成均等的小段,将余下的黄豆粉用筛网均匀的撒在小卷上,即可享用。
