Green Tea Mantou 绿茶馒头

『食材』

120 克 绿茶水,泡好的 ,放凉至室温(根据面粉吸水性调节水量)

3 克 干酵母粉

10 克 糖

30 克 糖桂花

270 克 面粉

500 克 水

糖桂花 ,依个人喜好涂抹用

 

『做法』

1.将绿茶茶汤、干酵母粉、糖和糖桂花放入主锅,以3 分/37°C/速度1激活酵母。

2.加入面粉,以3分/搅拌键和面,取出面团揉搓光滑后整形成圆球状,开始发酵。

3.将醒发好的面团取出,排气后揉搓成长条状,利用刮刀棒平均分成6小份,取1份面团搓成长约50厘米的细条状,从一头盘起至三分之一处,另一边蛇形状盘起,用筷子从中间夹起,放置在蒸锅里,按此方法完成其的余面团,在蒸锅和蒸盘各放3个面团静置约15分钟。

4.架上蒸锅组,以30分/120度/速度2蒸煮,取下蒸锅组,取出馒头,涂抹上糖桂花,趁热享用。

Direction

2. Add flour, knead the dough with a 3 min/stir key, take out the dough and knead it smoothly and form a spherical shape, and start to ferment.

3. Take out the proofed dough and knead it into strips after exhausting. Use a spatula to divide it into 6 small portions. Take 1 portion of the dough and knead it into thin strips about 50 cm long, starting from one end to one third. , The other side is in the shape of a snake, pick it up from the middle with chopsticks, place it in the steamer, follow this method to complete the remaining dough, put 3 dough in the steamer and steamer each, and let stand for about 15 minutes.

4. Set the steamer set, steam at 30 minutes/120 degrees/speed 2, remove the steamer set, take out the steamed buns, smear the sweet-scented osmanthus, and enjoy while hot.
