Home Made Burger Bun 汉堡面包

用料 :

200克 高筋面粉

90克 水

3克酵母

3克盐

8克奶粉

25克蛋液 

25克糖

25克 黄油

 

Ingredients :

200 g high-gluten flour

90g water

3 grams yeast

3 g salt

8 grams milk powder

25 g egg liquid

25 grams sugar

25g butter

把除黄油外的材料,按先液体材料后固体材料的顺序放入主锅。速度从3-6递增。

Put the ingredients except butter into the mixing bowl in the order of liquid ingredients first and solid ingredients. The speed increases from 3-6.

设置5分钟,按搅拌键揉面

揉好后加入黄油,继续揉面。

After kneading, add butter and continue kneading.

8 minutes 0°C mixer dough

取出面团后,整理成型,放入容器,盖上保鲜膜,发酵至2-3倍大。

After taking out the dough, arrange it into a shape, put it into a container, cover with plastic wrap, and ferment to 2-3 times its size.

取出面团,排气平均分割为6个。滚圆,放置松弛15-20分钟。

Take out the dough, vent and divide it into 6 evenly. Round and let rest for 15-20 minutes.

排气,2次滚圆,后刷蛋液,撒上白芝麻。放置38度环境中,进行第二次发酵

烤箱200度预热10分钟,面包放置中下层,180度,烤18分钟。(不同烤箱设置不同,根据自家烤箱设置)

出炉后放凉备用。

Preheat the oven at 200 degrees for 10 minutes, put the bread in the middle and lower layer, and bake at 180 degrees for 18 minutes. (Different oven settings are different, according to your own oven settings)
