Kong Poh Chicken 宫保鸡丁

宫保鸡丁是一道闻名中外的特色传统名菜

宫保鸡丁特色是辣中有甜

甜中有辣

鸡肉的鲜嫩配合花生的香脆

入口鲜辣酥脆

红而不辣,辣而不猛

肉质滑脆

主要材料 :

300g鸡胸肉切块2cm*2cm                   

100g黄瓜切丁                                      

100g胡萝卜切丁                                 

2个大青椒切丁                                 

3个干辣椒切段                                  

50g熟花生米去皮                            

30g油                                               

调味辅料 :

料酒5g

生抽1勺匙

淀粉1/2勺匙

鸡精1/2勺匙

芝麻油1/2勺匙

豆瓣酱10g

花椒1勺匙

食醋10g

糖粉5g

大葱段20g

蒜3瓣(切片)                                                        

需提前准备材料

1.将鸡肉切小块,加入料酒、生抽、淀粉、鸡精、芝麻油、腌制20分钟         

 2.将黄瓜、胡萝卜切丁、大青椒去籽去块、熟花生米去皮备用                                                                                                            

制作方法 :

1.将油、蒜、干辣椒、花椒、豆瓣酱加入主锅内,以120/2分钟/速度1爆 香,加入腌制好的鸡胸肉、备好的胡萝卜,以120/4分钟/逆转小勺翻炒

2.取一个碗加入淀粉、食醋、生抽、糖粉拌匀备用

3.加入青椒、黄瓜、熟花生米、大葱段、调好的酱汁、以120/4分钟/逆转小勺翻炒,结束后装盘即可


Ingredients

300g chicken breast cut into pieces 2cm*2cm

100g cucumber diced

100g carrots diced

2 large green peppers, diced

3 dried chilies, cut into sections

50g cooked peanuts, peeled

30g oil

Seasoning accessories:

Cooking wine 5g

1 tablespoon of light soy sauce

1/2 tbsp of starch

1/2 tablespoon of chicken essence

1/2 tablespoon of sesame oil

10g bean paste

1 tablespoon of pepper

10g of vinegar

5g powdered sugar

Scallion 20g

3 cloves of garlic (sliced)


Need to prepare materials in advance

1. Cut the chicken into small pieces, add cooking wine, light soy sauce, starch, chicken essence, sesame oil, and marinate for 20 minutes

2. Dice cucumber and carrot, remove seeds and chunks of green pepper, peel off cooked peanuts and set aside

Direction

1. Add the oil, garlic, dried chili, pepper, and bean paste to the mixing bowl, sauté at 120 degrees/2 minutes/speed 1, add the marinated chicken breasts and prepared carrots, at 120 degrees/4 minutes /Reverse the small spoon stir fry


2. Take a bowl and add starch, vinegar, light soy sauce and powdered sugar, mix well and set aside


3. Add green peppers, cucumbers, cooked peanuts, scallions, adjusted sauce, stir fry at 120 degrees/4 minutes/reversing a small spoon, and then put it on the plate.
