2 颗 蛋
1 茶匙 柠檬汁
80 克 牛奶
100 克 低筋面粉
20 克 糯米粉
1 茶匙 泡打粉
1/2 茶匙 可可粉
600 克 水 ,蒸煮用
『做法』
1.将糖放入主锅,以10 秒/速度10磨粉。
2.加入蛋和柠檬汁,以1分/速度4打发。
3.加入牛奶、低筋面粉、糯米粉和泡打粉,以10 秒/速度5混合。利用刮刀棒将食材刮至主锅底。再以10秒/速度5混合。
4.取出2汤匙混合蛋糊放入小碗内,在小碗内加入可可粉并搅拌均匀备用。
5.将主锅内剩余的混合蛋液分别倒入4个舒芙蕾瓷碗内,约八分满,再滴入4-5滴可可糊,用牙签晕开线条,画出咖啡色纹路。清洗主锅。
6.将水放入主锅,以8分/100°C/速度1煮沸。
7.架上蒸锅,放入4个舒芙蕾瓷碗并盖上蒸锅盖,以25分/120度/速度2蒸煮。取出趁热或放凉后享用。
Ingredients
100 g sugar
2 eggs
1 teaspoon lemon juice
80 g milk
100 g low-gluten flour
20 g glutinous rice flour
1 tsp baking powder
1/2 teaspoon cocoa powder

Direction
1. Put sugar in mixing bowl and grind at 10 seconds/speed 10.
2. Add egg and lemon juice, beat 1 min/speed 4.
3. Add milk, low-gluten flour, glutinous rice flour and baking powder, mix at 10 seconds/speed 5. Use a spatula to scrape the ingredients to the bottom of the mixing bowl. Mix again at 10 seconds/speed 5.
4. Take out 2 tablespoons of mixed custard into a small bowl, add cocoa powder into the small bowl and stir well for later use.
5. Pour the remaining mixed egg liquid in the mixing bowl into 4 soufflé porcelain bowls, about eighth full, and then add 4-5 drops of cocoa paste. Use a toothpick to blur the lines and draw the brown lines. Clean the mixing bowl.
6. Put water in mixing bowl and boil at 8 min/100°C/speed 1.
7. Set up the steamer, put 4 soufflé porcelain bowls and cover the steamer lid, and cook at 25 min/120 degrees/speed 2. Take out while hot or let cool.
