250 ml Fresh Cream

40 - 60g Lemon Juice

1/2 teaspoon Salt and Sugar

Setting :

Strain the finished cheese on the cotton cloth for at least 3 hours.

Boil milk and whipped cream in a cooking container Close 15 minutes 90°C mixer
Add lemon juice, sugar, and salt and lower the temperature to heat it up. Close 5 minutes 65°C mixer
Lower the temperature and keep stirring. Open 5 minutes 0°C mixer
