Simmered Pork Ribs with Chinese Yam 话梅山药炖排骨

『食材』

10 克 油

200 克 猪肋排 ,切段,提前汆烫,洗净沥干

8 颗 话梅 ,温水浸泡30分钟沥干

5 克 排骨酱(调味酱)

10 克 海鲜酱

5 克 老抽

15 克 糖

400 克 水

100 克 山药 ,去皮,切滚刀块

 

『做法』

1.将油、猪肋排、话梅、排骨酱、海鲜酱、老抽和糖放入主锅,以3 分/120°C/逆转/速度小勺爆香。

2.加入水,以30 分/100°C/逆转/速度小勺烹煮。

3.加入山药,以10 分/120°/逆转/速度小勺收汁,倒入碗中,趁热享用。

 

Ingredients

10 g oil

200 g pork ribs, cut into sections, blanch in advance, rinse and drain

8 plums, soak in warm water for 30 minutes and drain

5 g pork ribs sauce (seasoning sauce)

10 g hoisin sauce

5 g soy sauce

15 g sugar

400 g water

100 g yam, peeled and cut into pieces

Direction

1. Put the oil, pork ribs, plum, pork ribs sauce, hoisin sauce, dark soy sauce and sugar in mixing bowl, and saute at 3 min/120°C/reverse/speed teaspoon.

2. Add water and cook at 30 min/100°C/reverse/speed spoon.

3. Add the yam, collect the juice at 10 min/120°/reversal/speed small spoon, pour it into a bowl, and enjoy while it is hot.
