『做法』
1.鸡爪清洗干净,剪掉指甲,切成两段,柠檬切片胡萝卜切段。辅助篮里放入鸡爪,加入水没过鸡爪,以50度/5分钟/速度5清洗。
主锅中加入切好的鸡爪、姜片、料酒、水,以120度/15分钟/逆转/小匀烹煮。
2.煮好的鸡爪过凉水降温,控水备用。将小米椒、线椒、蒜放入主锅,以5秒/速度5切碎
3.主锅中加入陈醋、米醋、生抽、糖、香油,控干水的鸡爪,以65度/15分钟/逆转/小勺,低温烹煮入味。
4.倒入碗中加上柠檬、香菜、胡萝卜搅拌,还可以封上保鲜膜放入冰箱,冷藏后的鸡爪食用味道更佳。
