Sweet Potato Mantou 地瓜馒头

『食材』

740 克 水 (含料理和蒸煮用水)

1 茶匙 酵母粉

50 克 糖

500 克 中筋面粉, 多备一些手粉用

1小撮盐

250 克 地瓜, 去皮、切块(大约3公分)

10 克 油

 

『做法』

1.140克水、酵母粉和糖放入主锅,以2 分/37°C/速度 2加溫。

2.加入中筋粉、盐和地瓜,以30 秒/速度 5混合。

3.加入油,以5 分/搅拌键揉面,取出后放入大碗內,覆盖保鮮膜并置于温暖处待发酵至2倍大(约1小時),在撒上面粉的面团整型,切割成10份,放入有烘焙紙的蒸锅及整盘內,再发酵40分。

4.600克水放入主锅,架上蒸锅组,以30分/120度/速度2蒸煮,蒸好后焖5分钟开盖,冷却后即可享用。

Put 600 grams of water into the mixing bowl, set the steamer set, and steam at 30 minutes/120 degrees/speed 2. After steaming, let it simmer for 5 minutes, open the lid, and enjoy after cooling.
