Sweet & Sour Pork Rib 糖醋排骨

糖醋排骨是糖醋味型中具有代表性的一道大众喜爱的特色传统名菜。它选用新鲜猪子排作主料,肉质鲜嫩,成菜色泽红亮油润,猪排骨具有滋阴润燥.益精补血的功效。

 

主要材料:  

排骨500g

油10g

白糖50g

料酒30g

醋50g

老抽25g

生抽25g

姜片10g

制作方法 :

1·将排骨放入辅助蓝至主锅,加入刚好没过排骨的水,以50度/5分钟/速度5焯水洗净沥干备用                            

2.将油,姜片放入主锅内,以120度/3分钟/小勺爆香                           

3.将排骨,白糖,料酒,醋,老抽,生抽加入主锅内,以120度/25分钟/逆转小勺进行翻炒,最后5分钟取下量杯盖收汁                                               

4.结束后以4秒/速度3进行颠勺,最后装盘即可   


Main material:

500g ribs

Oil 10g

50g white sugar

Cooking wine 30g

Vinegar 50g

Old soy sauce 25g

25g light soy sauce

10g sliced ginger


Production Method :

1. Put the ribs into the auxiliary blue to the main pot, add water just under the ribs, blanch the ribs at 50 degrees/5 minutes/speed 5, rinse and drain.

2. Put the oil and ginger slices in the mixing bowl, and saute at 120°C/3 minutes/tsp

3. Add the ribs, sugar, cooking wine, vinegar, dark soy sauce, and light soy sauce to the mixing bowl, stir fry at 120 degrees/25 minutes/reversing a small spoon, and remove the lid of the measuring cup for the last 5 minutes to collect the juice

4. Reverse at 4 seconds/speed 3, and then serve to the plate.
