糖醋排骨是糖醋味型中具有代表性的一道大众喜爱的特色传统名菜。它选用新鲜猪子排作主料,肉质鲜嫩,成菜色泽红亮油润,猪排骨具有滋阴润燥.益精补血的功效。
主要材料:
排骨500g
油10g
白糖50g
料酒30g
醋50g
老抽25g
生抽25g
姜片10g
制作方法 :
1·将排骨放入辅助蓝至主锅,加入刚好没过排骨的水,以50度/5分钟/速度5焯水洗净沥干备用
2.将油,姜片放入主锅内,以120度/3分钟/小勺爆香
3.将排骨,白糖,料酒,醋,老抽,生抽加入主锅内,以120度/25分钟/逆转小勺进行翻炒,最后5分钟取下量杯盖收汁
4.结束后以4秒/速度3进行颠勺,最后装盘即可

Production Method :
